Cannabis Infused Holiday Sweet Potato Lefse

Cannabis infused, herbed sweet potato lefse, dressed with an infused walnut cream cheese spread and an infused cranberry sauce- topped with roasted chicken or turkey, thinly sliced apples, red leaf lettuce and cheddar cheese.

Makes 8 lefse flatbreads

Ingredients

Cranberry Sauce

12 ounces fresh cranberries

1/2 orange zested and juiced

1/2 cup water

3 tablespoons sugar

1/8 teaspoon each- cinnamon, nutmeg, clove and turmeric

dash salt

1 tablespoon cannabis infused butter

1-2 drops Cranberry Kush terpenes by True Terpenes

Combine all ingredients into a pot, leaving the terpenes until the sauce has been removed from heat. Reduce ingredients on low heat until cranberries are mostly smooth. Remove from heat, add terpenes.

Cannabis Cream Cheese Walnut Spread

2 ounces cream cheese, softened

2 ounces cannabis infused cream cheese, softened

2 tablespoons finely chopped walnuts

Combine all ingredients until incorporated.

For Lefse:

3 small-medium sweet potatoes or yams- oiled, salted and roasted, whole

Salt and pepper to taste

1 3/4 cup flour + about 1 cup for kneeding

1/4 teaspoon turmeric

1/8 teaspoon thyme

1/8 teaspoon rubbed sage

1/4 cup heavy cream

1/4 cup cannabis infused butter (contains about 1.5 teaspoon cannabutter per lefse)

For lefse assembly:

about 1 cup roasted chicken breast or turkey, sliced or shredded

8 thin slices cheddar cheese

8 pieces leaf lettuce

1 apple- sliced very thin

Preparing lefse:

While potatoes roast, heat cream, butter and seasonings, reserving flour. Scoop roasted potatoes into bowl, mash until smooth. Pour warmed, seasoned cream, cannabutter mixture over potatoes. Salt and pepper to taste. Add flour- dough will be slightly sticky still. Turn onto floured surface and kneed another cup or so of flour into the dough. Once, the gluten has developed a little from kneeding- separate into 8 even balls. Flatten a little with hands then roll out thin. Fry on skillet with very little butter or oil, on medium heat, until golden brown and cooked through.

Assembly:

On each lefsa, spread about 1 tablespoon walnut cream cheese; spread about one tablespoon cranberry sauce. Add a slice of cheddar cheese and 1-2 tablespoons chicken. Top with leaf lettuce and 3 or 4 thin apple slices. Roll and enjoy!
