Cannabis Infused Wild Berry Red Bull Gummies

Ruby Red Glittered Cannabis Wild Berry Red Bull Gummies!
Ingredients:
1 package Levo Raspberry Sherbet Gummy Mix or 6oz of your favorite gelatin mix
6 Tablespoons Wild Berry Red Bull or your favorite juice (you can use water also it just wont have as much flavor)
4 Tablespoons cannabis infused coconut oil or oil of choice
Directions:
In pot, combine Levo Raspberry Sherbet Gummy mix with 6 tablespoons of Wild Berry Red Bull. Mix thoroughly, cook over medium low heat until boiling, stirring often.
Once boiling starts, continue cooking, constantly stirring until gelatin dissolves. You will notice less "foamy" appearing bubbles and the gelatin will start to darken in color. You can also see the particles of gelatin, if you have not allowed it to dissolved completely.
Once, gelatin is completely dissolved, turn off heat and add cannabis infused coconut oil or oil of choice. I choose coconut because it can be a solid at room temperature, where as olive or MTC oil is not and cannot, which can effect the texture/consistency and shelf life of your gummies.
After adding your cannabis infused oil, stir, stir, stir! You need to emulsify the oil into the gelatin. This requires stirring until it is completely incorporated (cooling helps this process also) without allowing it to become too cool where you can no longer pour it and work with it before it solidifies. After adding your cannabis oil, you want to avoid additional heating to avoid more conversion of cannabinoids.
Once, you have fully emulsify the oil into the gelatin (you can tell because the oil will settle on top of gelatin and around edges of pan if it is not fully incorporated) immediately pour into silicone molds. Use a dough cutting tool or bench scraper tool to help move the gelatin into each cavity.
Allow gummies to fully solidify at room temperature before removing from molds.
When completely solidified, remove gummies from molds and place onto parchment lined sheet pan, in a single layer, not touching, to cure for 24 hours. Curing helps develop a "skin" which extends shelf life and helps create that more firm, "commercial gummy texture".
After curing for 24 hours, you can consume as is, or dust with edible glitter. I choose to dust with an edible gummy glitter in Ruby Red by Levo. you can also make a sour sugar mix to coat your gummies if you prefer a sour gummy (this will help extend shelf life).
Store gummies in a loosely tight containing in an area that does not have direct sunlight, moisture or heat sources. for the longest shelf life, freeze the gummies! When you want to eat them, simply remove your desired portion and allow to thaw (or eat frozen, delicious!) for a few minutes.
*Mold on gummies will appear in a white "speckled" pattern. Just be mindful of this, as the plant matter in the cannabis oil causes a quicker expiration.
