Spicy Infused Spinach Dip YouTube Video (full video)
Prep Time: about an hour
Yields: about 1.5 cups dip
Ingredients:
1-8 oz package cream cheese
4-5 garlic cloves, pasted with Grey Celtic Sea Salt
2 tablespoon finely diced onion
1 or 2 mini red sweet peppers, finely diced
1/2 jalapeno, finely diced
4 oz of spinach, chiffonade, rough
1/4 cup sour cream
1/4 cup Infused Thai Green Chili Sauce from our blog (Infused Thai Green Chili Sauce Recipe YouTube Video)
1 teaspoon each garlic salt and garlic powder
1/2 teaspoon onion powder
1/4 teaspoon each ground turmeric and ground mustard
1/8 teaspoon each ground cayenne and ground cumin
salt and pepper to preference
1 cup shredded cheddar cheese, half for topping
Directions:
Preheat oven to 350 degrees F
Preheat very lightly oiled pan over medium low heat while you prepare vegetables.
Prepare vegetables:
1. Finely dice onion, sweet peppers and jalapeno.
2. Paste garlic by chopping it roughly before adding about a 1/4 teaspoon salt and with the side of the knife, carefully and firmly press and pull knife over garlic until paste is formed. This may take a little while.
3. Chiffonade spinach and then run a knife across once to give a rough chop.
In hot, very lightly oiled pan, on medium low heat, sweat onion, peppers and garlic with seasonings until translucent.
Add in cream cheese, cook and stir often.
Add spinach, cook and stir often.
Add sour cream and Infused Thai Green Chili Sauce, combine well.
Cook until no lumps remain in cream cheese.
Add half cup shredded cheddar cheese and mix. Put into baking dish. Top with other half cup shredded cheddar cheese.
Bake at 350 degrees F for 15 minutes or until bubbly and golden brown. You can broil the last 3 to five minutes of cook time to help ensure cheese gets a nice golden-brown crust.
